
You cannot visit Bihar without eating Litti Chokha, and Gaya serves some of the best. Litti is a ball of whole wheat dough stuffed with 'Sattu' (roasted gram flour mixed with herbs and spices). It is roasted over a coal or cow dung fire until the crust is hard and smoky.
It is then broken, dipped generously in Ghee, and served with 'Chokha' (a mash of roasted eggplant, tomatoes, and potatoes). It is a hearty, spicy, and smoky meal that powers the hard-working people of the region.
