
Tilkut is synonymous with Gaya. It is a seasonal sweet made from Til (sesame seeds) and sugar or jaggery. The preparation is an art: the mixture is hammered and pounded by hand until it becomes brittle and flaky.
The best Tilkut is found in the Ramna Road area of Gaya. It is traditionally eaten during the Makar Sankranti festival (January). The smoky, nutty flavor is addictive.
